Around here, "is it allowed on the diet" sometimes takes precedents over "is it healthy", but Autism Mom has turned into Betty Crocker around here, cooking from scratch for us.

Heat Coconut Oil on Medium until hot.

Add sliced and washed carrot pieces. You can make these look like french fries too which works great around here. If you call it a french fry, it must be a french fry.

Reduce heat and cook for 15 minutes.

Place carrots on some paper towels to drain the grease.

Let sit for 5 minutes.

Serve.

Caroline ate these things up like there was no tomorrow (had to whip up a second batch) and it was AFTER she had already eaten lunch. I served with some organic ketchup. I know, I don't need to hear from the ketchup police. Ketchup makes life easier around here and sometimes you have to pick your battes. :-) These carrot chips are great for neuro-typical kids too, but I would never have eaten these in a million years when I was a kid.

Nature's Approved Gluten-Free Coconut Oil

" } } ["channel"]=> array(9) { ["atom"]=> array(1) { ["id"]=> string(45) "tag:blogger.com,1999:blog-1108232208737907391" } ["lastbuilddate"]=> string(31) "Mon, 28 Nov 2011 00:52:40 +0000" ["category"]=> string(124) "dietSCDGFCFSpecific Carbohydrate DietsnacksSpecial Diets 101Food DehydratorGluten Free/Caesin FreeEducationGluten Freeautism" ["title"]=> string(14) "Autism Recipes" ["link"]=> string(34) "http://autismrecipes.blogspot.com/" ["managingeditor"]=> string(29) "noreply@blogger.com (Contact)" ["generator"]=> string(7) "Blogger" ["opensearch"]=> array(3) { ["totalresults"]=> string(2) "35" ["startindex"]=> string(1) "1" ["itemsperpage"]=> string(2) "25" } ["tagline"]=> NULL } ["textinput"]=> array(0) { } ["image"]=> array(0) { } ["feed_type"]=> string(3) "RSS" ["feed_version"]=> string(3) "2.0" ["stack"]=> array(0) { } ["inchannel"]=> bool(false) ["initem"]=> bool(false) ["incontent"]=> bool(false) ["intextinput"]=> bool(false) ["inimage"]=> bool(false) ["current_field"]=> string(0) "" ["current_namespace"]=> bool(false) ["_CONTENT_CONSTRUCTS"]=> array(6) { [0]=> string(7) "content" [1]=> string(7) "summary" [2]=> string(4) "info" [3]=> string(5) "title" [4]=> string(7) "tagline" [5]=> string(9) "copyright" } ["last_modified"]=> string(31) "Sun, 05 Feb 2012 13:01:48 GMT " ["etag"]=> string(29) "eTALQgSb0iLe/jgFN2et6U+p4RU " } ["feedmeta"]=> array(18) { ["feed/atom/id"]=> string(45) "tag:blogger.com,1999:blog-1108232208737907391" ["feed/lastbuilddate"]=> string(31) "Mon, 28 Nov 2011 00:52:40 +0000" ["feed/title"]=> string(14) "Autism Recipes" ["feed/link"]=> string(34) "http://autismrecipes.blogspot.com/" ["feed/managingeditor"]=> string(29) "noreply@blogger.com (Contact)" ["feed/generator"]=> string(7) "Blogger" ["feed/opensearch/totalresults"]=> string(2) "35" ["feed/opensearch/startindex"]=> string(1) "1" ["feed/opensearch/itemsperpage"]=> string(2) "25" ["feed/id"]=> string(41) "http://feedproxy.google.com/AutismRecipes" ["update/last"]=> int(1328446908) ["update/ttl"]=> int(36) ["update/timed"]=> string(13) "automatically" ["update/hold"]=> string(9) "scheduled" ["feed/category"]=> string(124) "dietSCDGFCFSpecific Carbohydrate DietsnacksSpecial Diets 101Food DehydratorGluten Free/Caesin FreeEducationGluten Freeautism" ["link/uri"]=> string(41) "http://feedproxy.google.com/AutismRecipes" ["link/name"]=> string(14) "Autism Recipes" ["link/id"]=> string(2) "31" } ["post"]=> array(16) { ["post_title"]=> string(43) "GFCF Cooking Together: Learning Can be Fun!"
